Step 1
Thaw puff pastry and gently unroll according to package directions if using store-bought puff pastry. With a rolling pin, gently smooth out any creases and roll to about 12 x 12 inches. If using homemade, roll out a piece that is approximately 12 X 12 inches. Cut into 6 equal (3 by 4) pieces and place onto a lined baking sheet and into the fridge until needed.

Line the bottom of an air fryer basket with parchment paper that is cut so that there is about a ½-inch border around the edges; this is to prevent any sugar from dripping into the bottom of the basket.

Depending on the size of the air fryer, you may need to do this recipe in batches. If making in batches, keep puff pastry in the fridge until ready to assemble.

In a small bowl, mix the Redpath® Dark Brown Sugar, cinnamon, and salt until thoroughly combined.

Preheat air fryer to 400°F according to the manufacturer’s directions.

Slice bananas into coins.

Sprinkle approximately two teaspoons of the brown sugar mixture onto the parchment paper in the air fryer basket, spaced at least an inch apart. Slightly overlap the banana slices over the brown sugar. Place a puff pastry rectangle over the bananas and gently press around the edges to seal.
Step 8
Whisk the egg and water together. With a clean pastry brush, lightly brush the puff pastry with the egg wash. Place the basket into the preheated air fryer. Bake until pastry is puffed and golden brown in colour; 10 to 12 minutes.

Let the pastry sit in the basket for about 10 minutes before flipping it over.
Step 1
Place chocolate into a microwave-safe bowl. Heat at 20 to 30-second intervals until chocolate is almost completely melted.
Step 2
Stir to completely melt the chocolate. Place melted chocolate into a piping bag or use a spoon to drizzle chocolate over the banana tarts. If desired, dust with icing sugar just before serving.
*Redpath® Golden Yellow Sugar or Redpath® Demerara Style Sugar can be substituted for the Redpath® Dark Brown Sugar. Using the Golden Yellow Sugar may result in a pastry that has a more muted caramel flavour and may be lighter in colour. Using the Demerara Style Sugar may result in a deeper, earthier caramel flavour and may be darker than the original.
*Use other fruits that may be in season. Thinly sliced pears, apples, pineapple, peaches, or plums could work well.
*Make a double batch or more of the Redpath® Dark Brown Sugar mixture and keep it in an airtight container. Have puff pastry stored in the freezer for a quick dessert or unexpected guests.
