Rolling them in icing sugar gives them an added touch of sweetness. A tin or pretty box of these goodies will also make a lovely gift at any time of the year that is, if you can bring yourself to share any! Categories: Cookies, Brownies & Bars Desserts Snacks Granulated Sugar Ingredients What you need: 3/4 cup (175 mL) room temperature butter 1/2 cup (125 mL) Redpath Granulated White Sugar 1/4 tsp. (1 mL) baking powder 1 egg yolk 1/2 tsp. (2 mL) vanilla extract 1/4 tsp. (1 mL) almond extract 1 3/4 cups (425 mL) flour 1/2 cup (125 mL) mini or regular-sized semi-sweet chocolate chips Redpath Icing Sugar for dusting Instructions How to prepare: 1. Preheat oven to 325°F (160°C). 2. Beat butter in mixing bowl on medium speed for 30 seconds or use a wooden spoon. 3. Add sugar and mix well. 4. Beat in egg yolk, vanilla and almond extracts. 5. In a separate bowl mix flour and baking powder. Add the flour mixture to the butter mixture and mix until just combined. Stir in the chocolate chips. 6. Shape dough into 1-inch (3 cm) balls and place balls on cookie sheet. 7. Bake for 15 - 17 minutes or until edges are firm and bottoms are very lightly browned. Remove cookies and cool slightly. 8. In a small bowl, gently shake a few warm cookies at a time in Redpath Icing Sugar. Cool completely. Sift additional icing sugar on top of cookies. Makes about 2 dozen (more or less depending on how big or small you make them).
