Dessert Pizza

When it comes to pizza, there’s only one way to do it in the Redpath Test Kitchen: it’s got to be for dessert! This recipe is the perfect thing to serve alongside some of your favourite toppings - you could even make a party out of it. Chocolate chips, toasted coconut, strawberry jam and more! How will you decorate your slice?

1 10-inch pizza / 8 servings
For the crust:
  • 1¼ cups (156 g) all-purpose flour
  • ⅓ cup (60 g) cornmeal
  • ½ tsp (3 g) baking powder
  • ½ tsp (3 g) salt
  • ½ cup (112 g) unsalted butter
  • ½ cup (60 g) Redpath® Icing Sugar
  • 1 large egg
  • 1 tsp (5 ml) vanilla extract
For the toppings:
  • ½ cup (113 g) cream cheese, softened
  • ½ cup nut or seed butter of choice
  • ½ cup (60 g) Redpath® Icing Sugar
  • 1 tsp (5 ml) vanilla extract
Instructions
For the crust:

Step 1

In a large bowl whisk together the flour, cornmeal, baking powder and salt; set aside.

Step 2

In a separate bowl, beat the butter with an electric mixer on medium speed until smooth. Reduce speed to low and add the Redpath® Icing Sugar. Increase speed back to medium and beat until pale and fluffy; about 3 minutes.

Step 3

Beat in the egg, followed by the vanilla extract.

Step 4

Stir in the dry ingredients with a wooden spoon. Gather dough into a ball, wrap in plastic and chill for 30 minutes.

Step 5

Grease or line a baking sheet, or a pizza pan, with parchment paper.

Step 6

On a lightly-floured surface, roll out chilled dough into a 12-inch circle. Transfer to prepared baking sheet.

Step 7

Fold the outer 1 inch towards the centre of the dough. Pinch to create a ½ inch lip around the edge of the dough.

Step 8

Prick the dough all over with a fork and place in freezer for 20 minutes.

Step 9

Preheat oven to 350°F (180°C). 

Step 10

Bake crust in oven until golden brown for 20 to 25 minutes. Remove and cool completely on the baking sheet.

Step 1

Place the cream cheese, nut or seed butter, icing sugar and vanilla in a large bowl.

Beat with an electric mixer on medium speed until completely smooth.

For the assembly:

Step 1

Spread the cream cheese topping evenly onto the cooled crust and decorate with desired toppings.
