Make one batch of the Lemon Cupcake recipe according to instructions.

Make one buttercream recipe of your choice.

Pipe a mound of buttercream onto the completely cooled cupcakes.

With a sharp chef’s knife, slice marshmallows diagonally in half (see Chef’s Tips).
Step 3
Dip the cut ends into the shredded coconut and place the “ears” onto the mound of buttercream.
Step 4
Carefully place a heart-shaped nonpareil, jellybean, or chocolate egg onto the front of the mound for the bunny’s nose.
*Spray or lightly grease the blade to prevent marshmallows from sticking to the knife.
