Step 1
In a small pot, combine ¼ cup (60 ml) of the filtered water with the Redpath® Organic Granulated Sugar. Place over medium heat and bring to a boil; stir to dissolve sugar. Remove from heat and allow to cool completely.
Step 2
In a blender, add in the remaining filtered water (1000 ml) with the large flaked oats, vanilla extract, salt, and the cooled simple syrup.
Step 3
Process by pulsing the mixture until relatively smooth. Pulsing the oat mixture versus blending continuously helps to ensure that the oat beverage does not get over blended.
Step 4
Place a fine-mesh sieve lined with a layer of cheesecloth over a large measuring cup or bowl and pour the oat beverage into the strainer. Repeat this process twice for a smoother drink, rinsing the mesh between strainings.
Step 5
Store the oat beverage in an airtight glass container, pitcher, or jar in the refrigerator. Shake well before use as the beverage will tend to separate when left standing. Will keep in the fridge for up to 5 days.
*Though it will take slightly longer to strain, a clean, lint-free kitchen towel can be used in place of the cheesecloth when straining.
*Save the leftover oat pulp (approximately ¾ cup / 235 g) from straining the oat beverage. Add it into smoothies, or when making oatmeal, muffins, and cookies.
*Rolled oats and quick oats can be used in place of the large flaked oats.
*Wherever possible, use organic ingredients (for example, the oats and pure vanilla extract)
*If thinner oat drink is desired, add an additional ¼ cup (60 ml) of filtered water to the oats while blending. If a thicker beverage is desired, reduce the amount of filtered water added; up to ½ cup (125 ml).
*Do not over blend the oat beverage as this will result in a drink that has a slimy or gummy texture. Depending on the speed and power of the blender used, it should take between 30 to 60 seconds to blend.
*Do not heat oat beverage as this will result in a thick, gummy drink; however, homemade oat beverage can be added cold into hot teas and coffees.
*Oat milk can be used in place of regular milk in recipes.
