Not only is it pretty as a garden in bloom, the elderflowers and thyme give it a flavour that’s light, fresh, and almost minty. We promise it will knock your socks off – or your sandals if it’s patio season! Categories: Beverages & Cocktails Summer Golden Yellow Sugar Yields 4-6 servings Prep Time 15 minutes Cook Time 10 minutes + steeping time Ingredients For the Simple Syrup: 1 cup (50 g) dried elderflower petals 1 cup (250 ml) water 1 cup (218 g) Redpath® Golden Yellow Sugar, firmly packed 3 sprigs of fresh thyme To Serve: 6 cups (1500 ml) water 1 cup (250 ml) freshly squeezed lemon juice 1 recipe of simple syrup 4-6 sprigs of fresh thyme 1 lemon, cut into wedges Golden Yellow Sugar Instructions For the Simple Syrup: Whisk together all ingredients in a medium pot. Bring to a simmer, stirring until sugar has dissolved; about 5-7 minutes. Turn off heat, cover pot and let steep for 1 hour. Place in fridge and cool completely. Once cooled strain syrup. To serve: In a large jug whisk together water, lemon juice and simple syrup; refrigerate for 1 hour. Serve over ice and garnish with a sprig of thyme and a lemon wedge.
